First-generation beginning farmers Tessa and Wyatt Parks own W.T. Farms, a direct-to-consumer beef and hay operation. They graze steers on certified organic pasture at Sharing Our Roots Farm in Northfield, Minnesota. In the past, they’ve raised Holstein steers from calf to butcher. This year, due to Holstein calf prices, they’ll pivot to buying older steers and collaborating with nearby farmers to meet the needs of their customers.

At this field day, you’ll learn how Tessa and Wyatt crunch numbers to make big decisions like this shift on their farm. They’ll share other ways they’ve had to be flexible and change strategies. Through a range of hands-on simulations, you’ll get an idea of what it means to start a calf-to-butcher, grass-finished operation. Finally, they’ll help you decide what you can do on your own versus when it’s time to call a veterinarian.

*Due to the hands-on nature of this event, attendance is limited to 25 participants and registration is required. Complete event details will be provided upon registration.
